Shed some sweet light on your Christmas! And a lovely poem for you...

Dear Friends, here we are again. Xmas is coming! Nothing is more festive and cozy than these "pasticcini alle mandorle" (almond pasticcini) easy to make and soooooo Xmassy!  Cooking with the family is the perfect way to get into the holiday spirit.

250 g almond meal

200 g caster sugar

2/3 egg whites

1 vial of almond essence (1ml)

1/2 teaspoon of baking powder

Icing sugar for rolling the dough

1 pinch of salt

 Mix well the almond meal with the caster sugar and the baking powder. Lightly beat separately the egg whites with the pinch of salt. Add to the egg whites the almond essence and pour it to the almond and sugar mixture. Add it little by little until the mixture is well combined but not too wet (normally 2 and ½ egg whites should be enough for this recipe). Work the dough with the hands and make a compact ball. Cover with a cling wrap and let cool down in the fridge for at least 1 hour. After this time, sprinkle abundant icing sugar on a work plan and start rolling the dough in a long snake of about 2/3 cm diameter.  Cut in 3 cm pieces like when we make gnocchi. Roll the pieces well in the icing sugar no to be stick in your hands. Place them on a baking tray with a baking paper giving them the shape you like. Bake in a preheated oven 200C for 10/15 min or until lightly colored. Let them cool completely before eating.

Christmas Dinner

A Christmas dinner that can’t be beat
Here is the menu of what we’ll eat

Mashed potatoes whipped smooth and fluffy
Green bean casserole; nice and crunchy

Pickles and olives on a perfect relish tray
Cranberry delight that’s been chilling all day

Sweet potatoes such tasty treats
Hot rolls steaming both white and wheat

Homemade honey butter and strawberry jam
A gorgeous honey glazed Christmas ham

Turkey and noodles are piping hot
A fuzzy naval salad; I almost forgot 

A slow roasted turkey golden brown
And broccoli rice casserole; pass it around
For dessert we’ve a variety of tasty treats
Tons of scrumptious goodies to eat

Chocolate chip cookies and brownies so sweet
Four kinds of pies including minced meat

It’s all there so fill up your plate
I’m getting mine, I can hardly wait
